You can do the save and reload trick on stores and some containers I guess, but other than that there's no definate place to find Jedi Robes, or anything else for that matter. Oh yeah that's true. You can quite often get a few robes on Dantooine - either by buying them at the salvager camp, or by aquiring the dead salvager's loot. I've found that after playing the game through a few times the robes have become quite common in any merchant's inventory, so it's a good idea to check the stores to see what's been randomly spawned each time you play.
Robbing the Palace Museum on Onderon usually results in a decent robe too. They are randomly generated like all other items though, so it's possible to accumulate a hell of a lot of robes in one game and then to find them quite sparce next time. You can post now and register later.

Armor doesn't work in this game like it does in other RPG's.
The modifier for Dexterity is added to your Armor Class. The higher number you have in Dex, the higher modifier you have, the higher base Armor Class you have. When an oppontent attacks you, they roll a D20 and add usually their Str mod for melee or their Dex mod for ranged. If that number is higher than your 13, then you take damage.
If it is lower, they miss. Armor in the game adds to your AC. The difference is, usually, the lighter armors do no restrict your Dex modifier whereas the heavier armors will. This might not sound like a big deal, but trust me it is. Later on if you pump your Dex up which isn't a bad idea since you can get Lightsaber Finesse which uses your Dex mod for Attack Roll instead of Str you will have a comparable AC to wearing a Heavier armor.
There are some other things going on as well, but trust me - it evens out either way. But I don't. This will give you the best of both worlds. You get a crap ton of Feats all the necessary ones for being good in combat , you get a crap ton of Powers which the Guardian hardly gets any , and you get a crap ton of Skill Points which are probably the most useful abilities in the game.
Whatever weaknesses you'll have you will be able to make up for with equipment. Don't worry about armor - just pump your Dex up, get Lightsaber Finesse, and use the Heal Kits if you have to.
